Buffalo Chicken Pizza

It’s always great to find a recipe primed for adaptation. Last week, I made one of my favorites: BBQ Chicken Pizza. When I went to put away the leftovers, I glanced at the buffalo sauce in the refrigerator door and then back to the pizza. A light bulb went off. I was afraid this recipe wouldn’t make it to the table last night. There were two obstacles. The first is that I’ve been under the weather the past few days. My immune-system was left compromised after a nice 20-mile run on Monday. Secondly, the pizza dough that was purchased on Sunday had begun to grow in the refrigerator and was dangerously close to remaking The Blob. Hearty Beef Stew

There’s nothing like a bowl of hearty, rustic stew on a cold winter’s night. Snuggled in a blanket while the Christmas tree lights cast a soft glow, I enjoyed the fruit of my slow cooker’s labor. Let’s start with the vegetables. They are perfectly cooked. Rather than cooking them alongside the beef, the vegetables are wrapped in aluminum foil to steam on their own. This prevents the potatoes and carrots from becoming a mushy mess while also retaining their own flavor. Secondly, the beef is fork-tender. Mint Brownie Wedges

I think my family could be on Hoarders: Holiday Candy edition. We’ve left the pumpkin behind and our latest obsession is peppermint. However, peppermint is tricky. It can’t be too minty and the peppermint chunks can’t be too crunchy. Enter, Dove Peppermint Bark. Oh my god. These are dangerous. When I’m heading out the door for work, I usually grab about 3. A Holiday Snack

It’s not the holidays in my house until there’s a perpetual tin of Chex Mix. I make so many batches a year I’ve not only memorized the recipe, I’ve perfected the technique. I follow the classic recipe on the back of the box. If you’ve never made the Chex Party Mix before, whip up a batch! I don’t enjoy normal Chex Mix varieties but the combination of their seasonings in this recipe makes a great snack to munch on while watching Home Alone, Love Actually, or another classic Christmas film. It also gives me an excuse to buy Chex for another delicious treat (puppy chow!!!).

Mozzarella-Stuffed Chicken Breasts with Cherry Tomatoes

Chicken dishes have a tendency to run a little boring. I rarely order a chicken dish in a restaurant because when presented with steak or fish, chicken often falls by the wayside. It just doesn’t seem worth it when I can create a perfectly flavorful chicken dish at home, for a lot cheaper. I love this chicken dish because it has roasted tomatoes (cooked right alongside), a delicious cheesy, basil filling AND a crunchy garlic topping. The chicken and tomatoes also look good, which is always a plus when serving food.
